Bibim Kalguksu

Ingredients
- 8 oz kalguksu noodles (or thick wheat noodles)
- 3 tbsp gochujang (Korean chili paste)
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 stalks green onions, sliced

Cook the 8 oz noodles in boiling water until tender, about 5-7 minutes. Drain and rinse under cold water to stop cooking and remove excess starch.

In a large bowl, whisk together the 3 tbsp gochujang, 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tbsp sesame oil until smooth.

Add the drained noodles to the sauce and toss well to coat every strand. If the sauce is too thick, add 1-2 tbsp of water to loosen it.

Top with the 2 sliced green onions and serve immediately. For extra crunch, add sliced cucumber or a sprinkle of sesame seeds if you have them.
