Ingredients

  • 8 oz wheat noodles (or ramen noodles, discard seasoning packet)
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp chili oil
  • 1 tbsp rice vinegar
  • 1 medium cucumber
  • 2 whole eggs
  • 1 tbsp sesame seeds (white or black)

Instructions

    Boil salted water in a large pot. Add noodles and cook until al dente, stirring occasionally, about 4–5 minutes.

    Meanwhile, whisk together gochujang, chili oil, and rice vinegar in a small bowl until smooth.

    Bring a separate small pot of water to a boil. Gently add eggs and cook for 6–7 minutes until soft-boiled.

    Drain noodles well. Slice cucumber into thin rounds or matchsticks.

    Transfer noodles to a bowl. Toss with the gochujang sauce until evenly coated.
