Berry Parfait with Granola

Ingredients
- 2 cups Greek yogurt
- 2 cups mixed berries (fresh or frozen)
- 1 cup granola
- ½ cup coconut flakes
- 2 tbsp honey
- 1 tsp vanilla extract

In a small bowl, stir the 2 cups Greek yogurt with 1 tsp vanilla extract and 1 tbsp honey until smooth.

If using frozen berries, thaw them and drain excess liquid. If using fresh, rinse and pat dry.

In a dry skillet over medium heat, toast the 1/2 cup coconut flakes, stirring often, until golden and fragrant, about 3-4 minutes. Remove immediately to a plate to cool.

Spoon 1/4 cup of the yogurt mixture into each of 4 glasses or bowls, spreading it evenly.

Top the yogurt with a layer of berries (about 1/4 cup per glass), then sprinkle with 2 tbsp granola per glass.

Repeat the layers: another 1/4 cup yogurt, remaining berries, and remaining granola, ending with a dollop of yogurt.

Drizzle each parfait with the remaining 1 tbsp honey and sprinkle with the toasted coconut flakes. Serve immediately or chill for up to 2 hours.

For extra crunch, add a final sprinkle of granola just before serving.
