- 2 8-inch store-bought vanilla cake layers
- 2 cups heavy cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 6 leaves fresh mint leaves

In a large bowl, combine 2 cups heavy cream, 3 tbsp powdered sugar, and 1 tsp vanilla extract. Beat with an electric mixer on medium-high until stiff peaks form, about 3-4 minutes.

Place one 8-inch cake layer on a serving plate. Spread about 1 cup of the whipped cream evenly over the top, leaving a 1/2-inch border.

Scatter half of the 1 cup raspberries and half of the 1 cup blackberries over the cream, pressing them in gently.

Top with the second cake layer. Spread the remaining whipped cream over the top and sides of the cake, smoothing with a spatula.
