Ingredients
- 2 large mango
- 1.5 cups heavy cream
- ¼ cup sugar
- 1 tbsp gelatin
- 3 tbsp water
- 2 oz white chocolate

Puree the 2 large mangoes in a blender until smooth. You should have about 2 cups of puree. Set aside.

In a small bowl, sprinkle the 1 tbsp gelatin over the 3 tbsp water and let sit for 5 minutes until spongy. Then microwave for 10 seconds until melted.

In a large bowl, whip the 1.5 cups heavy cream and 0.25 cup sugar until soft peaks form, about 3 minutes. Gently fold in the mango puree and melted gelatin until just combined.

Pour the mixture into a 6-inch cake pan or individual glasses. Refrigerate until set, at least 4 hours or overnight.

Before serving, shave the 2 oz white chocolate with a vegetable peeler and sprinkle over the top of the mousse cake.
