Ingredients
- ½ lb beef sirloin or flank steak, thinly sliced
- 3 tbsp soy sauce
- 6 cloves garlic, minced, divided
- 2 cups cooked white rice
- 2 whole large eggs
- ½ cup pickled peppers (or banana peppers)

Toss beef with 2 tbsp soy sauce and 3 minced garlic cloves. Let sit 2 minutes.

Heat 2 tbsp oil in a large skillet over high heat. Sear beef without stirring until caramelized edges form, ~2 minutes per side.

Transfer beef to a plate. Reduce heat to medium. Add remaining 3 garlic cloves and 1 tbsp oil to the skillet, stirring until fragrant, ~30 seconds.

Add rice, breaking up clumps, and stir-fry until grains are separate and edges turn golden, ~3 minutes. Drizzle in remaining 1 tbsp soy sauce and toss.

Push rice to the sides. Crack eggs into the center. Cover and cook until whites set but yolks still jiggle, ~3 minutes.

Divide rice and eggs between two plates. Top each with beef tapa and serve with pickled peppers on the side.
