Ingredients
- 1.5 lbs beef sirloin or tenderloin, cut into 1-inch cubes
- ½ cup roasted unsalted peanuts, finely ground
- 1 tbsp cayenne pepper
- 1 tbsp paprika
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 3 tbsp olive oil
- 2 medium tomatoes, diced
- ½ medium red onion, thinly sliced
Instructions
- 1
Soak 8 wooden skewers in cold water for 20 minutes.
- 2
Mix ground peanuts, cayenne, paprika, garlic, ginger, 0.5 tsp salt, and black pepper in a shallow bowl.
- 3
Pat beef dry. Toss with 1 tbsp oil and a pinch of salt until coated evenly.
- 4
Roll beef cubes in peanut mixture, pressing gently so coating adheres. Thread onto skewers, 4–5 pieces per skewer.
- 5
Brush skewers with remaining 2 tbsp oil. Let rest 5 minutes.
- 6
Toss diced tomato and onion with a pinch of salt and black pepper. Set aside.
- 7
Heat grill or grill pan to medium-high (oil the grates lightly). Grill skewers 3–4 minutes, turning once, until edges char and beef cooks through.
- 8
Transfer to a serving platter. Let rest 2 minutes.
- 9
Spoon tomato relish over skewers. Serve immediately with lime wedges if desired.
