Ingredients

  • 1 lb ground beef
  • 3 cups stir-fry vegetables (broccoli, bell pepper, snap peas, carrots, or similar)
  • ½ cup stir-fry sauce
  • 2 cups rice, cooked
  • 3 whole eggs

Instructions

    Heat oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Add ground beef and cook, breaking up with a spoon, until no pink remains, about 5 minutes.

    Add stir-fry vegetables and sauce, then stir and cook until vegetables are tender-crisp, about 4 minutes.

    Scramble the eggs in a separate skillet or push to the side of the current pan, cooking until set, about 3 minutes.

    Divide cooked rice between two bowls, top with beef stir-fry, and serve with scrambled egg omelet on the side.
