Ingredients
- 1.5 lb beef stew meat
- 1.5 lb potatoes
- 4 cups mixed greens
- 3 cups beef broth
- 1 medium onion
- 2 tbsp olive oil
- 2 tbsp balsamic glaze

Heat 2 tbsp olive oil in a large pot over medium-high. Add 1.5 lb beef stew meat in a single layer; cook until browned on all sides, about 8 minutes. Remove beef to a plate.

Add 1 sliced onion to the pot; cook over medium until soft and golden, about 5 minutes. Return beef to pot.

Add 3 cups beef broth and 1.5 lb diced potatoes. Bring to a boil, then reduce heat to low; cover and simmer until beef is tender and potatoes are fork-tender, about 30 minutes.
