Ingredients
- 1 lb beef stew meat
- 3 medium potatoes
- 1 medium onion
- 2 cups beef broth
- 2 tbsp olive oil
- 1 tsp salt

Heat 2 tbsp olive oil in a large pot over medium-high. Add 1 lb beef stew meat and cook until browned on all sides, about 5 minutes.

Add 1 chopped onion and cook until soft, about 3 minutes. Season with 1 tsp salt and black pepper if you like.

Add 3 peeled and cubed potatoes and 2 cups beef broth. Bring to a boil, then reduce heat to low.

Cover and simmer until beef is tender and potatoes are cooked through, about 15 minutes. Stir occasionally.
