Ingredients
- 1 lb beef stew meat
- 1 large yellow onion
- 3 medium carrots
- 2 tbsp tomato paste
- 2 cups beef broth
- ¼ cup fresh cilantro
Instructions

Heat 1 tbsp oil in a large pot over medium-high. Add the 1 lb beef stew meat and cook until browned on all sides, about 5 minutes. Remove and set aside.

In the same pot, add the 1 sliced onion and 3 sliced carrots. Cook until the onion is soft and golden, about 5 minutes.

Stir in the 2 tbsp tomato paste and cook for 1 minute until fragrant. Return the beef to the pot.

Pour in the 2 cups beef broth and bring to a boil. Reduce heat to low, cover, and simmer until the beef is tender, about 20 minutes.

Stir in the 0.25 cup chopped cilantro and season with salt and pepper. Serve hot.
