Ingredients

  • 8 oz dried wide rice noodles (pad thai width)
  • 10 oz beef sirloin or ribeye, thinly sliced
  • 2 cups broccoli florets
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp granulated sugar

Instructions

    Boil salted water in a large skillet. Add rice noodles and cook until just tender, ~5 minutes. Drain and set aside.

    Wipe the skillet dry. Heat oil over medium-high until it shimmers. Add beef in a single layer and sear 60 seconds without stirring.

    Flip beef and cook 60 seconds more until edges brown. Transfer to a plate.

    Add broccoli to the skillet. Toss with oil and cook 3 minutes, stirring occasionally, until edges char.

    Return beef and noodles to the skillet. Add soy sauce, oyster sauce, and sugar. Toss constantly for 90 seconds until glossy.

    Taste and adjust salt or soy as needed. Serve immediately while steam rises.
