Ingredients
- ¾ lb beef sirloin or flank steak, thinly sliced
- 2 medium bell peppers (red or mixed), cut into 1-inch pieces
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- ½ tsp dried red chili flakes
- 2 whole eggs

Cook jasmine rice according to package directions if not already made.

Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Add beef in a single layer. Sear without moving for 90 seconds until edges brown, then stir and cook 1 more minute. Transfer to a plate.

Add garlic and peppers to the skillet. Stir-fry over medium-high heat until peppers soften and char slightly, about 3 minutes.

Return beef to skillet. Add soy sauce and chili flakes. Toss everything until coated and hot, about 1 minute.

Push stir-fry to one side of skillet. Crack eggs into empty side, cover loosely, and fry until whites set but yolks jiggle, 2-3 minutes.

Serve stir-fry and fried egg over steamed rice immediately.
