Ingredients

  • 1 lb ground beef
  • ¼ cup onion, finely minced
  • ¼ cup fresh parsley, finely chopped
  • 2 tsp cumin, coriander, paprika (mixed)
  • ¾ cup Greek yogurt
  • 1 whole lemon (juiced)

Instructions

  1. 1

Mix ground beef, minced onion, parsley, cumin blend, salt, and pepper in a bowl until just combined—don't overwork.

  2. 2

Divide meat into 4 portions and mold each around a metal skewer, pressing into a dense cylinder.

  3. 3

Place skewers on a broiler pan. Broil 4 inches from heat for 6–7 minutes, turning halfway, until charred and cooked through.

  4. 4

While skewers broil, stir yogurt, lemon juice, minced garlic, and salt in a small bowl—this is your sauce.

  5. 5

Slide kofta off skewers onto a plate. Drizzle yogurt sauce over top and serve hot.
