Ingredients
- 1 lb beef sirloin strips
- 2 cups cooked white rice
- 2 bell peppers
- 1 onion
- 2 cups french fries
- 1 cucumber
- 1 tomato
- 2 tbsp olive oil

Season the 1 lb beef strips with salt and pepper. Heat 1 tbsp of the olive oil in a large skillet over high heat until shimmering.

Add the beef in a single layer and cook without stirring for 2-3 minutes until browned, then flip and cook another 2 minutes until just cooked through. Transfer to a plate and set aside.

Reduce heat to medium, add the remaining 1 tbsp olive oil, then add the 1 sliced onion and 2 sliced bell peppers. Cook, stirring occasionally, until softened and lightly charred, about 8 minutes.

Meanwhile, cook the 2 cups french fries according to package directions until crispy and golden, about 15-20 minutes in a 425°F oven.

Slice the 1 cucumber and 1 tomato. Arrange the 2 cups cooked rice, beef, vegetables, fries, cucumber, and tomato on a large platter. Serve with lemon wedges if desired.
