Ingredients

  • 4 whole chicken breasts
  • 4 whole ham slices
  • 4 whole swiss cheese slices
  • 1 cup breadcrumbs
  • 2 whole eggs
  • ½ cup flour
  • 3 tbsp olive oil
  • 1 pinch salt and pepper

    Pound each chicken breast to 1/4-inch thickness. Season both sides with salt and pepper.

    Place 1 ham slice and 1 cheese slice on each breast, then roll up tightly and secure with toothpicks.

    Set up three shallow dishes: flour, beaten eggs, and breadcrumbs. Dredge each roll in flour, then egg, then breadcrumbs, pressing to coat.

    Heat 3 tbsp olive oil in a large skillet over medium heat. Cook the rolls, turning occasionally, until golden brown on all sides, about 8-10 minutes.

    Transfer to a baking sheet and bake at 375°F for 15-20 minutes, until the chicken is cooked through and the cheese is melted. Let rest 5 minutes before slicing.
