Ingredients

  • 2 whole russet potatoes, large
  • 1.5 cups rotisserie chicken, shredded
  • 4 slices bacon, cooked and crumbled
  • ¾ cup cheddar cheese, shredded
  • ½ cup BBQ sauce
  • ¼ cup sour cream
  • 2 tbsp green onion, sliced

Instructions

    Poke potatoes all over with a fork, rub with olive oil and salt, then bake at 400°F for 15 minutes until tender when pierced.

    While potatoes bake, mix shredded chicken with BBQ sauce in a bowl until evenly coated.

    Cut each potato in half lengthwise. Scoop out a shallow well, leaving a thin shell.

    Divide BBQ chicken between the four potato halves, then top each with bacon, cheddar, and a dollop of sour cream.

    Bake at 400°F for 5 minutes until cheese melts and filling is heated through.
