Ingredients
- 1 lb minced beef
- 1 medium onion
- 2 cloves garlic
- 1 tbsp curry powder
- ½ cup dried apricots
- 2 large eggs

Preheat oven to 375°F. In a skillet over medium heat, cook 1 diced onion and 2 minced garlic cloves until soft, about 5 minutes.

Add 1 lb minced beef and 1 tbsp curry powder. Cook, breaking up meat, until browned, about 8 minutes. Stir in 0.5 cup chopped dried apricots.

Transfer mixture to a baking dish. In a bowl, beat 2 eggs with a pinch of salt and pepper. Pour over meat.
