Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 13.5 oz coconut milk
  • 3 tbsp panang curry paste
  • 4 leaves kaffir lime leaves
  • 2 medium shallots, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tsp brown sugar

Instructions

    Heat a splash of oil in a wok over medium-high. Add shallots and garlic, stir-fry until fragrant, about 1 minute.

    Add curry paste and stir-fry for 1 minute until it darkens and smells aromatic.

    Pour in half the coconut milk, bring to a simmer, and cook until it thickens slightly, about 3 minutes.

    Add beef slices and cook, stirring, until just browned, about 2 minutes.

    Stir in remaining coconut milk, fish sauce, and brown sugar. Simmer gently for 5 minutes until beef is tender.

    Tear kaffir lime leaves and stir in. Cook 1 minute more, then remove from heat.

    Garnish with fresh cilantro and serve hot with rice.
