Ingredients
- 2 steaks filet mignon steaks
- 4 slices bacon slices
- ½ lb green beans
- ½ medium yellow onion
- 2 tbsp olive oil
- 1 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- 1
Pat the 2 filet mignon steaks dry with paper towels. Wrap each steak with 2 bacon slices, tucking the ends underneath. Season all over with 0.25 tsp salt and 0.125 tsp pepper.
- 2
Heat 1 tbsp olive oil in a 10 inch skillet over medium-high heat. Add the steaks and sear until the bacon is browned and crisp, about 3-4 minutes per side for medium-rare. Remove to a plate and let rest.
- 3
While the steaks rest, trim the ends off the 0.5 lb green beans and slice the 0.5 onion into thin strips.
- 4
In the same skillet, reduce heat to medium. Add the remaining 1 tbsp olive oil and the 1 tbsp butter. Add the green beans and onion, season with the remaining 0.25 tsp salt and 0.125 tsp pepper. Cook, stirring occasionally, until the beans are tender-crisp and the onion is soft, about 6-8 minutes.
- 5
Slice the rested steaks against the grain and serve with the green bean mixture on the side.
