Ingredients
- 2 whole bagels
- 1 whole avocado, ripe
- 4 oz smoked salmon
- ½ whole lemon
- 1 tablespoon fresh dill
- 1 pinch salt and pepper
Instructions
- 1
Split each bagel in half horizontally by placing it cut-side down on a cutting board and slicing through the middle until you have two round, flat halves from each bagel.
- 2
Place both bagel halves cut-side up on the slots of a toaster or on a toaster oven rack, then toast at medium-high heat until the surface turns golden-brown and feels crispy when you touch it, about 3 to 4 minutes.
- 3
Cut the avocado in half lengthwise around the pit, then twist the two halves apart and discard the pit by carefully striking it with your knife blade and lifting it out.
- 4
Use a spoon to scoop the soft avocado flesh out of each half skin, then place it on a small cutting board and mash it with a fork until it reaches a chunky, spreadable texture with some small pieces still visible.
- 5
Cut the lemon half into a wedge, then squeeze the juice over the mashed avocado and stir gently to combine, which prevents browning and adds brightness.
- 6
Remove the toasted bagel halves from the toaster and place them cut-side up on two plates, spacing them slightly apart.
- 7
Divide the mashed avocado evenly between the two bagel halves, spreading it in a thin, even layer using the back of a spoon.
- 8
Divide the smoked salmon into 4 equal portions, then lay one portion on top of the avocado on each bagel half, draping it loosely so it doesn't bunch.
- 9
Chop the fresh dill into small pieces about the size of peppercorns, then sprinkle half the dill over each bagel half.
- 10
Sprinkle a small pinch of salt and a few grinds of black pepper over each bagel half, then serve immediately while the bagel is still warm.
