Ingredients

  • 4 slices bread
  • 1 whole avocado
  • 2 whole eggs
  • 4 slices ham, sliced
  • ½ cup cherry tomatoes
  • 1 tbsp balsamic glaze

Instructions

    Toast the bread until golden and crispy, about 2 minutes per side.

    While bread toasts, halve the avocado, scoop into a bowl, and mash with a pinch of salt and pepper until chunky.

    Heat butter in a skillet over medium-high. Warm the ham slices for 30 seconds per side until lightly crisped, then set aside.

    In the same skillet, crack the eggs and fry until whites set but yolks still jiggle, about 3 minutes.

    Spread mashed avocado on each toast slice. Top with ham, a fried egg, and a handful of sliced tomatoes.
