Ingredients

  • 6 whole large eggs
  • 1 whole avocado, ripe
  • 1 tbsp lemon juice
  • 1 to taste salt and pepper
  • ¼ tsp red pepper flakes or paprika

Instructions

    Boil eggs in salted water for 10 minutes, then transfer to ice bath.

    Peel and halve each egg. Scoop yolks into a bowl.

    Halve avocado, scoop flesh into the bowl with yolks.

    Mash avocado and yolks together until smooth. Stir in lemon juice.

    Season with salt and pepper. Spoon into egg white halves.

    Sprinkle red pepper flakes or paprika over top. Serve immediately.
