- 2 9-inch rounds pie crust
- 6 medium apples
- ¾ cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1 large egg

Preheat oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish, pressing gently against the bottom and sides.

Peel, core, and slice the 6 apples into 1/4-inch thick slices. In a large bowl, toss the apples with 3/4 cup sugar, 1 teaspoon cinnamon, and 1 tablespoon lemon juice until well coated.

Pour the apple mixture into the pie crust, mounding slightly in the center. Dot the top with 2 tablespoons of butter, cut into small pieces.

Roll out the second pie crust and place it over the filling. Trim the excess, then crimp the edges to seal. Cut a few slits in the top to allow steam to escape.

In a small bowl, beat the 1 egg with 1 tablespoon of water. Brush the egg wash over the top crust for a golden finish.
