Ingredients

  • 2 cups all-purpose flour, divided
  • 1 cup butter, divided
  • ¾ cup sugar, divided
  • 8 whole apples (granny smith or honeycrisp), peeled and cored
  • 1.5 teaspoon cinnamon
  • ½ teaspoon salt

    Set the oven to 400°F and wait until the indicator light or beep tells you it has finished preheating, about 10 minutes.

    In a medium bowl, mix 1.5 cups of flour with 0.25 teaspoon of salt using a fork or your fingertips until the mixture looks like breadcrumbs.

    Cut 4 ounces of cold butter into small cubes the size of peas, then add them to the flour mixture and work them in with your fingertips until the texture is crumbly and no large chunks remain.

    Add 3 tablespoons of ice water, one tablespoon at a time, mixing gently with a fork after each addition until the dough just comes together when pressed.

    Press the dough into the bottom and sides of a 9-inch pie dish, creating an even layer with no gaps, and set it aside.

    Slice each apple in half lengthwise (from top to bottom), then slice each half crosswise into 1/4-inch-thick slices, like cutting bread.

    In a large bowl, combine the apple slices with 0.25 cup of sugar and 1.5 teaspoons of cinnamon, stirring gently until the apples are evenly coated.

    Spread the apple mixture into the prepared pie crust in an even layer.

    In a small bowl, mix the remaining 0.5 cup of flour, 0.5 cup of sugar, and 0.25 teaspoon of salt with a fork until combined.

    Cut the remaining 12 ounces of cold butter into small cubes and add them to the flour mixture, then work them in with your fingertips until the texture looks like coarse breadcrumbs with pea-sized pieces of butter still visible.

    Spread the crumb topping evenly over the apples, covering the surface completely without pressing down.

    Place the pie in the preheated oven and bake until the crumb topping turns golden brown and the filling bubbles slightly at the edges, about 40 minutes.
