Ingredients

  • 6 oz dark chocolate, chopped
  • ¾ cup heavy cream
  • 3 tbsp butter
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 8 oz store-bought pound cake or sponge cake
  • ½ cup fresh red currants
  • 1 tbsp cocoa powder for dusting

Instructions

    Heat cream and butter in a small saucepan over medium until steaming, about 90 seconds.

    Remove from heat and stir in chopped chocolate, sugar, and vanilla until smooth and glossy.

    Let the fudge cool 2 minutes, then whip with a fork until fluffy and mousse-like, about 1 minute.
