Ingredients

  • 1.5 lb beef sirloin or flank steak, sliced thin (about 1/8-inch)
  • 1.5 tsp coriander seeds, toasted and crushed
  • 1 tsp smoked paprika
  • 1 medium red onion, thinly sliced
  • ¼ cup white vinegar
  • 6 oz sharp cheddar or mature gouda, sliced or chunked

Instructions

  1. 1

Toss beef slices with coriander, paprika, salt, and black pepper until evenly coated.

  2. 2

Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds.

  3. 3

Working in batches, sear beef strips 60–90 seconds per side until edges brown and inside stays pink. Transfer to a board.

  4. 4

In the same skillet, add sliced red onion and vinegar, then stir off heat for 30 seconds until fragrant. Transfer to a small bowl.

  5. 5

Arrange warm beef, pickled onions, cheese, crusty bread, and sea salt on a serving board. Serve warm.
