Ingredients
- 1.5 lb beef sirloin or flank steak, sliced thin (about 1/8-inch)
- 1.5 tsp coriander seeds, toasted and crushed
- 1 tsp smoked paprika
- 1 medium red onion, thinly sliced
- ¼ cup white vinegar
- 6 oz sharp cheddar or mature gouda, sliced or chunked

Toss beef slices with coriander, paprika, salt, and black pepper until evenly coated.

Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds.

Working in batches, sear beef strips 60–90 seconds per side until edges brown and inside stays pink. Transfer to a board.

In the same skillet, add sliced red onion and vinegar, then stir off heat for 30 seconds until fragrant. Transfer to a small bowl.

Arrange warm beef, pickled onions, cheese, crusty bread, and sea salt on a serving board. Serve warm.
