Ingredients

  • 2 large, sliced thin onion
  • 4 cups beef broth
  • 4 slices (baguette or crusty bread) bread
  • 1 cup, grated swiss cheese

Instructions

    Heat 2 tbsp oil in a large pot over medium-high heat until shimmering.

    Add sliced onions and cook, stirring occasionally, until deep golden brown, ~12 minutes.

    Pour in beef broth, bring to a simmer, and season with salt and pepper.

    Toast bread slices in a skillet or under the broiler until golden, 2–3 minutes per side.

    Ladle soup into bowls, top each with a slice of toasted bread and 1/4 cup grated Swiss cheese.
