Ingredients

  • ½ lb ground lamb
  • 1.5 cups basmati rice, cooked
  • ½ medium onion, sliced
  • 2 tbsp curry paste or garam masala
  • 1 medium carrot, sliced thin
  • ½ cup plain yogurt
  • ½ cup coconut milk
  • ½ whole lime (juiced)

Instructions

    Heat oil in a large skillet over medium-high. Brown ground lamb, breaking it up with a spoon, until no pink remains, ~5 minutes.

    Add sliced onion and curry paste. Stir and cook until onion softens and paste is fragrant, ~2 minutes.

    Stir in sliced carrot and coconut milk. Simmer 3 minutes until carrot is tender-crisp.

    Fold in cooked rice gently to combine. Heat through, ~1 minute.

    Divide biryani between bowls. Top each with a dollop of yogurt mixed with lime juice.
