Ingredients

  • 6 cups beef broth
  • 8 oz smoked sausage (kielbasa or similar), sliced into 1/4-inch rounds
  • 4 oz deli ham, diced
  • 2 medium potatoes, peeled and cut into 1/2-inch cubes
  • ½ cup pitted green or mixed olives, halved
  • 2 tbsp tomato paste
  • ½ cup sour cream, for serving

Instructions

    Bring beef broth to a boil in a large pot over medium-high heat.

    Add potatoes and diced sausage; simmer for 8 minutes until potatoes soften.

    Stir in ham, olives, and tomato paste; simmer 3 minutes more until warmed through.

    Taste and season with salt and black pepper as needed.

    Ladle into bowls and top each with a spoonful of sour cream and fresh dill.
