Ingredients

  • 2 cups store-bought chocolate cake (crumbled)
  • ½ cup cream cheese frosting (store-bought or homemade)
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening
  • ¼ cup rainbow sprinkles
  • 12 count lollipop sticks or wooden dowels

Instructions

  1. 1

Mix crumbled cake and frosting in a bowl until it forms a damp, moldable dough.

  2. 2

Roll into 12 balls roughly the size of walnuts. Refrigerate on a parchment-lined tray for 5 minutes.

  3. 3

Melt chocolate chips and coconut oil together in a microwave-safe bowl in 30-second bursts, stirring between each, until completely smooth.

  4. 4

Insert a stick into each cake ball, leaving 1 inch exposed at the top.

  5. 5

Dip each ball into melted chocolate, twisting to coat. Let excess drip off over the bowl.

  6. 6

Sprinkle immediately with rainbow sprinkles, then stand upright in a cup or vase to set, 3 minutes.
