Ingredients

  • 2 cups vegetable oil for frying
  • 1 cup all-purpose flour
  • 3 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 4 oz whole milk chocolate
  • ½ cup heavy cream

    Heat oil in a deep skillet over medium-high until it shimmers, ~3 minutes. Test with a wooden spoon handle — it should sizzle immediately.

    Transfer flour to a piping bag fitted with a large star tip. Squeeze 4-inch strips directly into hot oil, cutting with scissors. Fry 4 at a time, 90 seconds per side until golden.

    Drain churros on paper towels. Mix cinnamon and sugar in a shallow bowl, then toss warm churros to coat.

    Chop chocolate and place in a small bowl. Heat cream until steaming, ~90 seconds, then pour over chocolate. Let sit 30 seconds.
