Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 whole large eggs
  • 1.25 cup all-purpose flour
  • 2 tsp ground cinnamon, divided
  • ½ tsp baking powder

    Preheat oven to 350°F. Line an 8×8 sheet pan with parchment paper.

    Whisk together 0.25 cup sugar and 1 tsp cinnamon in a small bowl. Set aside.

    Beat butter and remaining 0.5 cup sugar until fluffy, about 2 minutes. Add egg and mix until combined.

    Fold in flour, 1 tsp cinnamon, baking powder, and a pinch of salt until just combined.

    Spread batter into prepared pan. Sprinkle cinnamon-sugar mixture evenly over the top.

    Bake 12–14 minutes until edges are set but center still jiggles slightly. Cool 5 minutes, then slice into 12 bars.
