Ingredients

  • 12 count pre-made crepes
  • 2 cups heavy cream
  • 3 tbsp powdered sugar
  • 5 drops per color food coloring (red, yellow, blue, green, purple)
  • ½ tsp vanilla extract
  • ½ cup fresh berries (for garnish, optional)

Instructions

    Pour heavy cream and powdered sugar into a bowl. Whip with an electric mixer until stiff peaks form, ~3 minutes.

    Divide whipped cream into 5 bowls. Add 5 drops food coloring to each (red, yellow, blue, green, purple), stirring gently.

    Lay one crepe on a plate. Spread a thin layer of red whipped cream on top, then place another crepe down.

    Repeat with remaining colors (yellow, blue, green, purple), stacking crepes and frosting until all 12 are used.

    Frost the top and sides with any remaining whipped cream, smoothing gently with an offset spatula.

    Refrigerate 5 minutes, then slice with a serrated knife using a gentle sawing motion. Garnish with berries if desired.
