Ingredients
- ¾ lb beef sirloin or flank steak, thinly sliced
- 2 medium bell peppers (red and yellow), sliced into strips
- 1 medium yellow onion, sliced into strips
- 1 tsp chili powder
- ½ tsp cumin
- 1 whole lime
- 6 whole flour or corn tortillas
Instructions
- 1
Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.
- 2
Add steak in a single layer, sprinkle with chili powder, cumin, salt, and pepper. Sear 2 minutes without moving—edges should brown.
- 3
Flip and cook another 90 seconds until the center is medium-rare. Slide onto a plate.
- 4
Add another 1 tbsp oil to the skillet. Toss in peppers and onion with a pinch of salt; cook 5 minutes until edges char and soften.
- 5
Return steak and any juices to the skillet. Squeeze the lime over top and toss to coat, about 30 seconds.
