Ingredients

  • 6 slices bacon, chopped
  • 8 large eggs
  • ½ cup heavy cream
  • 1 cup Gruyère cheese, shredded
  • ¼ medium yellow onion, finely diced
  • 1 tbsp fresh thyme or chives, chopped

Instructions

  1. 1

Preheat oven to 400°F. Cook bacon in a 10-inch cast iron skillet over medium-high until crispy, about 5 minutes. Transfer to a plate.

  2. 2

Pour off most bacon fat, leaving about 1 tbsp. Add diced onion to the skillet and sauté until softened, 2–3 minutes.

  3. 3

Whisk eggs and cream together in a bowl. Season with salt and pepper. Stir in cooked bacon, cheese, and thyme.

  4. 4

Pour egg mixture into the skillet over the onions. Stir gently to distribute bacon and cheese evenly.

  5. 5

Bake until the center is just set but still slightly jiggly when you shake the pan, 8–10 minutes.

  6. 6

Let cool 2 minutes, then slice into wedges and serve hot from the skillet.
