Ingredients
- 6 slices bacon, chopped
- 8 large eggs
- ½ cup heavy cream
- 1 cup Gruyère cheese, shredded
- ¼ medium yellow onion, finely diced
- 1 tbsp fresh thyme or chives, chopped

Preheat oven to 400°F. Cook bacon in a 10-inch cast iron skillet over medium-high until crispy, about 5 minutes. Transfer to a plate.

Pour off most bacon fat, leaving about 1 tbsp. Add diced onion to the skillet and sauté until softened, 2–3 minutes.

Whisk eggs and cream together in a bowl. Season with salt and pepper. Stir in cooked bacon, cheese, and thyme.

Pour egg mixture into the skillet over the onions. Stir gently to distribute bacon and cheese evenly.
