Ingredients

  • ¾ lb beef sirloin steak, thinly sliced against the grain
  • 6 cups store-bought pho broth (beef)
  • 1 lb fresh rice noodles
  • 3 whole star anise pods
  • 1 whole cinnamon stick
  • 1 whole lime (halved), plus fresh herbs and bean sprouts for serving

Instructions

  1. 1

Pour pho broth into a large pot. Add star anise and cinnamon stick.

  2. 2

Bring broth to a rolling boil over high heat, then reduce to medium and simmer for 4 minutes.

  3. 3

While broth simmers, place rice noodles in a bowl and cover with hot tap water to soften, about 3 minutes.

  4. 4

Drain noodles and divide among four deep bowls.

  5. 5

Top each bowl with beef slices. Pour hot broth directly over the beef—the heat will cook it rare to medium-rare.

  6. 6

Serve with lime halves, fresh herbs, bean sprouts, and fish sauce on the side for seasoning.
