Ingredients
- ¾ lb beef sirloin steak, thinly sliced against the grain
- 6 cups store-bought pho broth (beef)
- 1 lb fresh rice noodles
- 3 whole star anise pods
- 1 whole cinnamon stick
- 1 whole lime (halved), plus fresh herbs and bean sprouts for serving

Pour pho broth into a large pot. Add star anise and cinnamon stick.

Bring broth to a rolling boil over high heat, then reduce to medium and simmer for 4 minutes.

While broth simmers, place rice noodles in a bowl and cover with hot tap water to soften, about 3 minutes.

Drain noodles and divide among four deep bowls.

Top each bowl with beef slices. Pour hot broth directly over the beef—the heat will cook it rare to medium-rare.
