Ingredients

  • 1 lb beef sirloin or ribeye, thinly sliced
  • 8 cups beef or chicken broth
  • 4 whole star anise pods
  • 2 tbsp fresh ginger, sliced
  • 8 oz rice noodles, dried
  • 2 tbsp fish sauce

Instructions

    Bring broth to a boil in a large pot over high heat, then add star anise and ginger.

    Reduce heat to medium-low and simmer uncovered for 8 minutes until fragrant.

    Meanwhile, cook rice noodles in boiling salted water until tender, then drain.

    Stir fish sauce into the broth and taste — adjust salt and fish sauce as needed.

    Divide noodles among four bowls, then top each with a handful of sliced raw beef.
