Ingredients
- 10 oz beef ribeye or sirloin, thinly sliced
- 1 medium yellow onion
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1.5 cups cooked white or sushi rice
- 2 whole eggs

Divide cooked rice between two bowls and keep warm.

Slice the onion into 1/4-inch-thick half-moons.

Heat a skillet over medium-high. Add beef and cook, stirring occasionally, until edges brown, ~2 minutes. Transfer to a plate.

In the same skillet, add onion and sauté until softened and edges caramelize, ~3 minutes.

Return beef to skillet. Pour in soy sauce and mirin; toss until beef is coated and liquid reduces to a glaze, ~1 minute.
