Ingredients

  • 10 oz beef ribeye or sirloin, thinly sliced
  • 1 medium yellow onion
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1.5 cups cooked white or sushi rice
  • 2 whole eggs

Instructions

    Divide cooked rice between two bowls and keep warm.

    Slice the onion into 1/4-inch-thick half-moons.

    Heat a skillet over medium-high. Add beef and cook, stirring occasionally, until edges brown, ~2 minutes. Transfer to a plate.

    In the same skillet, add onion and sauté until softened and edges caramelize, ~3 minutes.

    Return beef to skillet. Pour in soy sauce and mirin; toss until beef is coated and liquid reduces to a glaze, ~1 minute.

    Spoon beef and onion over rice. Top each bowl with a soft onsen egg or soft-boiled egg. Serve immediately.
