Ingredients

  • 1 lb rotisserie pork, shredded
  • 1.5 cups fresh pineapple, cut into 0.5-inch cubes
  • 1.5 tsp chili powder and cumin
  • 8 count corn or flour tortillas
  • ½ medium white onion, thinly sliced
  • ¼ cup fresh cilantro, chopped

Instructions

    Heat a large skillet over medium-high heat. Add pineapple cubes and cook without stirring for 2 minutes until charred.

    Push pineapple to the side. Add shredded pork, sprinkle with chili powder and cumin, and toss for 2 minutes until fragrant.
