Ingredients
- 1 1/2 lbs cleaned squid, bodies sliced into rings and tentacles kept whole
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup fresh flat-leaf parsley, roughly chopped
- 2 lemons, cut into wedges for serving

Pat squid completely dry with paper towels — moisture is the enemy of a good sear. Season with paprika, oregano, salt, and pepper.

Heat olive oil in a large skillet over very high heat until shimmering. Add garlic and cook for 30 seconds until fragrant.

Add squid in a single layer and cook undisturbed for 90 seconds, then toss and cook 1 more minute. Do not overcook — squid turns rubbery fast.
