Ingredients

  • 1 1/2 lbs cleaned squid, bodies sliced into rings and tentacles kept whole
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup fresh flat-leaf parsley, roughly chopped
  • 2 lemons, cut into wedges for serving

Instructions

    Pat squid completely dry with paper towels — moisture is the enemy of a good sear. Season with paprika, oregano, salt, and pepper.

    Heat olive oil in a large skillet over very high heat until shimmering. Add garlic and cook for 30 seconds until fragrant.

    Add squid in a single layer and cook undisturbed for 90 seconds, then toss and cook 1 more minute. Do not overcook — squid turns rubbery fast.

    Remove from heat, toss with fresh parsley, and transfer to a serving dish. Arrange lemon wedges throughout.
