Ingredients
- 4 medium zucchini
- 2 tbsp olive oil
- 1 lb ground beef
- 1 medium onion
- 2 cloves garlic
- 24 oz tomato sauce
- ½ tsp salt
- ¼ tsp black pepper

Spiralize the 4 zucchinis into noodles. If you don't have a spiralizer, use a vegetable peeler to make wide ribbons. Set aside.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the 1 lb ground beef and cook, breaking it up, until browned, about 5-7 minutes. Remove with a slotted spoon and set aside.

In the same skillet, add the remaining 1 tbsp olive oil. Add the 1 diced onion and cook until soft, about 4 minutes. Add the 2 minced garlic cloves and cook for 1 minute until fragrant.

Return the beef to the skillet. Pour in the 24 oz tomato sauce, 0.5 tsp salt, and 0.25 tsp black pepper. Stir and bring to a simmer. Let it bubble gently for 10 minutes until thickened.

Add the zucchini noodles to the skillet and toss with the sauce. Cook for 2-3 minutes until just tender but still slightly crisp. Serve immediately.
