Ingredients
- 2 medium zucchini
- 2 large tomatoes
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- 1
Slice the 2 zucchinis into half-moons and chop the 2 tomatoes into chunks. Thinly slice the 1 onion and mince the 3 garlic cloves.
- 2
Heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the sliced onion and cook until soft and translucent, about 3-4 minutes.
- 3
Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly to avoid burning.
- 4
Add the zucchini slices and cook, stirring occasionally, until they start to brown and soften, about 5-7 minutes.
- 5
Stir in the chopped tomatoes, 1 tsp dried oregano, 0.5 tsp salt, and 0.25 tsp black pepper. Cook until the tomatoes release their juices and the zucchini is tender, about 3-4 minutes.
