Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • ¾ cup water
  • 3 tablespoons olive oil
  • 2 tablespoons za'atar spice mix

    In a large bowl, mix 2 cups flour, 1 tsp instant yeast, and 1 tsp salt. Gradually add 3/4 cup warm water and 1 tbsp olive oil, stirring until a shaggy dough forms.

    Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.

    Punch down the dough and divide into 4 equal pieces. Roll each piece into a 6-inch round, about 1/4-inch thick.

    In a small bowl, mix 2 tbsp za'atar with 2 tbsp olive oil to form a paste. Brush the mixture evenly over each flatbread.

    Heat a cast-iron skillet over medium-high heat. Cook each flatbread for 2-3 minutes per side, until golden brown and puffed in spots.

    Serve warm, optionally with extra za'atar sprinkled on top.
