Ingredients
- 1 box chocolate cake mix
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
- 2 cups chocolate frosting
- ½ cup shredded chocolate
- 1 whole lemon
Instructions
- 1
Preheat oven to 350°F. Grease a 15x10 inch jelly roll pan and line with parchment paper.
- 2
In a large bowl, combine the 1 box cake mix, 3 eggs, 0.5 cup oil, and 1 cup water. Beat until smooth, about 2 minutes.
- 3
Pour batter into prepared pan and spread evenly. Bake until a toothpick inserted in center comes out clean, about 15-18 minutes.
- 4
While cake is warm, roll it up with the parchment paper into a log shape. Let cool completely, about 30 minutes.
- 5
Unroll the cooled cake and spread 1 cup of the chocolate frosting evenly over the surface. Roll it back up without the parchment.
- 6
Frost the outside of the log with the remaining 1 cup chocolate frosting, creating bark-like ridges with a fork.
- 7
Sprinkle the 0.5 cup shredded chocolate over the top and garnish with thin slices of the 1 lemon. Slice and serve.
