Yuca with Mojo

Ingredients

  • 1 lb yuca (cassava), peeled and cut into chunks
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • ¼ cup sour orange juice (or 2 tbsp lime + 2 tbsp orange juice)
  • 1 tsp salt
  • 2 tbsp fresh cilantro, chopped

Instructions

    Place the 1 lb yuca chunks in a pot, cover with water, add 1/2 tsp salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    While yuca cooks, make the mojo: in a small skillet, heat 3 tbsp olive oil over medium. Add 3 minced garlic cloves and cook until fragrant, about 1 minute, without browning.

    Stir in the 1/4 cup sour orange juice (or lime-orange mix) and remaining 1/2 tsp salt. Simmer for 2 minutes until slightly thickened, then remove from heat.

    Drain the cooked yuca and transfer to a bowl. Pour the warm mojo over it and toss gently to coat.

    Sprinkle with 2 tbsp chopped cilantro and serve warm.
