Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup vegetable oil

Instructions

    Combine flour, salt, and pepper in a large bowl and make a well in the center.

    Crack eggs into the well and whisk together, gradually pulling flour from the edges.

    Pour in milk in two additions, whisking until smooth. Let batter rest 20 minutes.

    Preheat oven to 425°F. Pour 1 tsp oil into each cup of a 12-cup muffin tin.

    Place tin in oven for 5 minutes until oil is smoking hot and shimmering.

    Carefully pour batter into hot oil, filling each cup halfway. Bake 20-25 minutes.

    Puddings are done when puffed, golden brown, and crispy on edges. Do not open oven early.

    Remove from oven and serve immediately while still puffy and hot.
