Ingredients
- 2 cups plain yogurt
- 1 large peach
- ½ cup raspberries
- ½ cup strawberries
- ½ cup blueberries
- 2 tablespoons honey
- 1 tablespoon lemon juice
Instructions
- 1
Dice the 1 large peach into small pieces, and slice the 0.5 cup strawberries. Keep the 0.5 cup raspberries and 0.5 cup blueberries whole.
- 2
In a small saucepan, combine the diced peach, sliced strawberries, whole raspberries, blueberries, 2 tbsp honey, and 1 tbsp lemon juice.
- 3
Cook the fruit over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens slightly, about 8-10 minutes. The compote should look glossy and syrupy.
- 4
Remove the compote from heat and let it cool for 5 minutes, until it is warm but not hot.
- 5
Divide the 2 cups yogurt into two bowls. Spoon the warm compote over the yogurt, dividing it evenly.
- 6
Serve immediately, or chill for 10 minutes for a cooler topping. Enjoy!
