Ingredients

  • 4 whole chicken drumsticks
  • 1 tsp turmeric powder
  • 1 cup coconut milk
  • 1.5 cups long-grain rice
  • 2 whole eggs
  • ½ whole cucumber
  • 1 cup bean sprouts
  • 2 tbsp fried shallots

Instructions

    In a pot, combine 1.5 cups rice, 1 tsp turmeric, 1 cup coconut milk, and 1.5 cups water. Bring to a boil, then reduce heat to low, cover, and simmer until liquid is absorbed and rice is tender, about 15-20 minutes.

    While rice cooks, season 4 chicken drumsticks with salt and pepper. Heat 1 tbsp oil in a skillet over medium-high heat and brown the chicken on all sides, about 5 minutes.

    Add 1/2 cup water to the skillet, cover, and simmer until chicken is cooked through and juices run clear, about 15 minutes. Uncover and cook 2 more minutes to crisp the skin.

    Place 2 eggs in a small pot, cover with water, bring to a boil, then cook for 8 minutes. Drain, cool under cold water, and peel.

    Slice the cucumber into rounds and rinse the bean sprouts. Set aside.

    To serve, spoon the yellow rice onto plates, top with a chicken drumstick, halved egg, cucumber slices, and a handful of bean sprouts. Sprinkle with fried shallots.
