Ingredients
- 1 lb beef sirloin or ribeye, cut into thin bite-sized pieces
- 3 tbsp yellow curry paste
- 1 can (13.5 oz) coconut milk
- 1 tbsp fish sauce
- ½ tbsp brown sugar
- 1 medium red bell pepper
- 1 whole lime (zested + juiced)

Heat 2 tbsp neutral oil in a 12-inch skillet over high heat until shimmering, ~90 seconds.

Sear beef in batches 90 seconds per side without stirring—edges should brown. Transfer to a plate.

Reduce heat to medium. Add curry paste to the pan, stir constantly until fragrant, ~60 seconds.

Pour in coconut milk, fish sauce, and brown sugar. Stir to combine.

Slice the bell pepper into 1/2-inch-wide strips. Add pepper and beef back to the pan, simmer 5 minutes.

Squeeze lime juice over top, stir in zest. Serve over rice with fresh cilantro if you have it.
